1. Singhare ka Halwa (Water Chestnut Halwa)
A warm bowl of halwa during fasting can make you feel indulgent. For the perfect Halwa, make sure to use Sumeet Non-Stick Kadhai.
Ingredients:
o Singhare ka atta (water chestnut flour)
o Ghee
o Sugar
o Water
o Chopped nuts (almonds, cashews)
o Cardamom powder
Method:
- Heat ghee in the non-stick Kadhai.
- Add Singhare ka atta and roast until golden brown and aromatic.
- To a different pan, add water and sugar and boil it until the sugar dissolves.
- Now add the sugar syrup into the flour, to avoid lumps, stir it continuously.
- The mixture should thicken and leave the sides of the Kadhai.
- Now garnish with dry fruits and cardamom powder, and serve it warm.
2. Sabudana Tikki (Sago Tikki)
For the best, less oily tikki use Sumeet Tawa
Ingredients:
o Soaked sabudana
o Boiled potatoes (mashed)
o Roasted peanuts (coarsely crushed)
o Rock salt (sendha namak) to taste
o Green chilli (finely chopped)
o Fresh coriander leaves (chopped)
o Ghee for shallow frying
Method:
1. Mix sabudana, potatoes, peanuts, chilli, and coriander.
2. Add sendha namak if you want and form small round patties.
3. Heat the Sumeet Tawa and lightly brush it with ghee.
4. Place the patties and cook on medium flame until golden and crisp on both sides.
5. Serve it with coriander, tomato, and green chilli chutney.
3. Samak ki Khichdi
Ingredients
o Samak rice (barnyard millet), rinsed well
o Potatoes, boiled and cubed
o Ghee
o Cumin seeds
o Green chillies, slit
o Rock salt (sendha namak) to taste
o Water
o Fresh coriander leaves, chopped
Method
- Heat ghee in the Sumeet Tope/Patila.
- Now add cumin seeds and cook them till they splutter. Put in the green chillies for a quick sauté.
- Add the cubed boiled potato and stir slowly for a minute.
- Add rinsed samak rice, followed by water and rock salt.
- Give it a nice stir, then cover with a lid, and cook on a medium flame until the millet turns soft and the water is absorbed.
- Garnish with fresh coriander leaves, and your samak khichdi is ready to serve.
